Piquant String Beans
4-6 servings

1 lb. trimmed
string beans
2 Tbsp. extra virgin olive oil, divided
1 medium red onion,
thinly sliced
2 Tbsp. red wine
vinegar, divided
1 Tbsp. Colman's
Whole Grain Mustard
1 1/2 tsp. honey
1 tsp. Kosher salt

Heat 1qt. saucepan with 1 Tbsp. oil over medium heat; add onion and cook 6 minutes until translucent. Stir in 1Tbsp. vinegar; cool. Meanwhile, add beans to boiling water in medium saucepan, cook until just tender, 5-7 minutes. Stir remaining ingredients into onions. Drain beans; toss with dressing and serve.
